La Marzocco performance at home, with the shot in your hands. The GS3 MP is the mechanical paddle version of the GS3. Nothing is programmed and there is no volumetric dosing: you open the paddle, watch the pressure build on the gauge, shape the extraction as it runs, and close it when you decide the shot is done.
Everything under the panels is pure La Marzocco. The GS3 carries the thermal stability system used in the La Marzocco Strada, including a pre-heating system, digital PID control, a saturated group and a dual boiler system, so brewing and steaming never compete with each other. All that is left for you to do is grind, dose and tamp.
The paddle and conical valve
The paddle drives a conical valve. The first position sends water to the puck at low pressure, for as long a pre-infusion as you want. Push further and the valve opens progressively up to full pump pressure. Pull back mid-shot and the pressure declines. Long saturations, lower peak pressures and tapered finishes are all yours to make, which is why the MP has a following among people who chase light roasts.
Periscope manometer
A periscope manometer sits above the group head and reads brew pressure at the point of brewing rather than at the boiler, so the needle shows what the coffee is actually feeling. It adds height above the machine body, so measure your cabinet clearance before ordering.
Machine operation
Mechanical paddle (MP). Manual shot control, with no volumetric dosing and no shot programming. If you would rather press a button and get the same shot every time, the GS3 AV is the auto volumetric version of the same machine.
